Make Your Own Sourdough Pizza
Sourdough makes for a fantastic pizza crust; crisp enough for my thin crust loving mother yet bread like enough for me, who personally thinks thin crust tastes like a cardboard cracker. Plus if you make the full recipe you get enough dough for a pizza and a loaf of bread. All you have to do is follow the recipe for bread I shared last week until after you knead the dough then you roll it flat and put it on a cookie sheet covered with cornmeal. A good tomato sauce isn't very hard either. Simply combine about 3/4 of a can of tomato paste with about a half a cup of water -basicly enough to make it spradable- a sprinkling of oregano, basil, garlic powder, sugar, salt, and pepper, or whatever seasonings you prefer in a sauce pan over low heat for a few minutes so the flavors mesh. -We don't measuer much here, you just have to taste the sauce and make sure the seasonings are right.-
The topings are up to you. We like an everything kind of pizza. Anchoves, onions, spinach, peppers, olives, sausage, even kale. If we have any freash, we like to add exrta basil and sliced tomatos. You have to fry the breakfast sausage seperately before adding it and the onions and bell peppers taste better if you caramelize them first, but everything else can go on as is. Then cover everything with cheese, mom and I use Monterey Jack and a little Romano, but any readly melting cheese is good. Try putting some kale on top of the cheese too. It's crunchy and good!

Halloween Sugar Cookies
While sugar cookies are usually a Christmas treat Mom and I always have to make a batch for Halloween. Mom loves Red Hots; I put them on as much as possible. They are best if you put them on before you bake them.
The frosting is milk mixed with powder sugar and food dye. Put powder sugar in a bowl and add a little milk. Continue adding very small amounts of milk until it reaches an almost spreadable consistency. Add food coloring. (It will make it more liquid.) If it's not spreadable at this point add more milk.
These are ones we made from some new metal cut out shapes we fond on sale at Michaels. Some of the shapes are weird, like the cat that looks more like a chipmunk, or the candy corn (Seriously?). But the price was right and you don't have to worry about them getting stuck like with some of our older one that have a covered back so you have to dig the cookies out if they get stuck. And the bats are cool.
You could also use them to make Halloween biscuits. :)

Sugar Cookies
1 cup sugar 2 cups Flour
1 stick butter 1/2 teaspoon salt
1 egg 1 teaspoon baking powder
1 teaspoon Vanilla
Cream butter and sugar. Add an egg and vanilla. Sift in flour, salt, and baking powder. Chill for an hour. (Hint: leave the dough not being used in the refrigerator. It's easier to work with when cold.) Bake on a cookie sheet at 375 degrees for 8 minutes. Makes two dozen.

Fantastic Cheese Enchiladas / Happy Cinco de Mayo
Happy Cinco de Mayo! This is a recipe for great restaurant style Tex-Mex Enchiladas. Be forewarned, this is not diet food and is addictive. Also it is a lot easier to make if there are more than one person working in kitchen, mom and I make them together.
You can also add already cooked chicken, or spinach. We add spinach and kale to the cheese. And kale on top. I don't know what happened to the photos with the kale on top.

First make the gravy.
Chili Gravy
1/4 c. oil 1tsp. salt
1/4 c. flour 1/2tsp. pepper
2T. chili powder 1/2tsp. oregano
2tsp. cumin 2c. chicken broth or vegetable broth (if you want)
1/2tsp. garlic powder 2T. tomato paste
Heat the oil and flour, stirring constantly, until you have a light brown roux. Add chili powder, cumin, garlic powder, salt, pepper, and oregano. Cook for a minute. Add broth and tomato paste, stir until thicken into a sauce.
Then make the Enchiladas.
Cheese Enchiladas (quantities depend upon how many enchiladas you plan on making)
Yellow corn tortillas Half a yellow onion, chopped (optional)
Half a loaf of Processed Cheese cubed One green onion, chopped (also optional)
Chili gravy Shredded Cheddar and Monterey Jack cheese
Dip a tortilla in hot oil, just a minute or so to soften them up and get the water out. Place some chopped onion and about 6 cubes of processed cheese in a line on a tortilla. Roll the tortilla around the filling and place in the baking dish. Repeat until the dish is filled or the desired numbers of enchiladas is reached. Cover with chili gravy, shredded cheese, and chopped green onion. Bake at 350 until the cheese bubbles. Enjoy.
I told you this isn't diet food. I guess you could bake the tortillas, but that usually results in burned tortilla chips in this house. Or maybe microwave them, since you're really just getting the frost out and softening the tortillas when you fry them.
